This us the custard. In the caramel mould put the 12 tbsp if sugar and caramelise on gas till the sugar dissolves and becomes the dark caramel color. Then take the mould off the gas and with the help of a tong keep moving the mould to line the caramel on all the sides of the mould and till the caramel stops moving.
  2. Then pour the custard into this caramel mould and put in a cooker with water and cover the caramel mould. Close the cooker without it's whistle and steam for 20 mins. Then switch off the gas wait for another 20 mins and open the cooker. Remove the caramel mould wait for sometime more say half hr and demold your caramel in your dish. CHILL and ENJOY
