  2. Saute chena mix some ghee and gradually mix maida into it.last add sugar and saute it.next add caramel sauce. When it became sticky off the flame.
  3. Grease some ghee in both hand and make the shape. Garnish with raisens and chopped cherry. Add one drop of caramel sauce on the top of the sandesh.
  4. Now the dish is ready to serve.

Normally caramel custard is so smooth which just melt in mouth. But this one has a texture in the custard from the sooji which is just perfect. Take sugar and water in a sauce pan and cook till it is caramelized. Now pour this in a heat proof bowl and swirl the pan so it coats. Now make batter, take egg whites in a bowl and use a beater to whip till fluffy.
