Stir in spinach; continue cooking and stirring just until spinach wilts. Remove vegetables from pan to small bowl. As I started thinking about what vegetables to put in the omelet, I realized that almost any veggie works. Most of the time, I go the traditional route and use peppers, onions, and tomatoes.

Steps to make Vegetables Omlette:
  1. Take a Mixing bowl. Add besan, maida and baking powder.
  2. Mix well.
  3. Now add some water and whisk very well. Make batter with small quantity of water constantly.
  4. Add all vegetables and,green chillies,ginger,salt mix with batter
  5. Now batter should be smooth and flowing consistency. Like a dosa batter.
  6. Now heat a non-stick pan on a low flame.
  7. Spread one teaspoon oil. Now pour the batter with a ladle and gently spread. Let it cook for medium flame.
  8. Cook the omlete till the top slightly bubbles and begins to look cooked.
  9. Now spread little amount of chilli flakes and mixed herb on the top of omlete. - Now drizzle oil on the omlete at the edges and all around.
  10. Cook till golden spot now flip and cook the other side.
  11. Serve hot omlete with ketchup.
