For me a dash of mixed Italian herbs always comes handy. - 2. Heat the skillet and grease it with oil, wipe away the excess with a tissue. - 3. Spread the egg mixture on the hot skillet and cover the skillet. - 4. Let the eggs cook for 2 minutes, now remove the cover. - 5. Release the omelet form the bottom of the skillet using a flat spatula.

- Spread the vegetable mixture on one half of the omelet, and fold the other half on top of it. - 7. If using cheese place the cheese slices on one half and the cover it with vegetables and fold. - 8. Cover and cook for 20-30 seconds. - 9. Remove on a platter and serve with your choice of toast.
