The ingredients needed to make Sprouted moong sabji:
  1. Take as required Water for soaking
  2. Make ready 3/4 cup whole moong dal
  3. Make ready 3 tbsp oil
  4. Make ready 1 tbsp mustard seeds

  7. Take 1 onion finely chopped
  8. Prepare 2 tomatoes finely chopped

  15. Prepare as per taste Jaggery( optional)
  16. Prepare as required Water for consistency
  17. Take as required Coriander leaves for garnishing

Sprouting increases the nutritive value of lentils and most Indian homes consume sprouts atleast once a week. Lentils like Green gram, Black chickpeas, moth bean are sprouted and used to make a variety of salads and subzi. Sometimes, I make plain spicy sprouted moong shaak. Steps to make Sprouted moong sabji:
  1. Firstly in a large kadhai heat oil.
  2. Further, add mustard seeds, cumin and hing allow to splutter.
  3. Additionally, add onions and continue to saute.
  4. Also, add ginger garlic paste and green chilli. saute well till the raw aroma disappears
  5. Furthermore, add tomato and saute well. Saute till the tomatoes turn soft and mushy.
  6. Additionally, add turmeric, chilli powder, coriander powder, garam masala powder, dry mango powder, jaggery and salt.
  7. Saute on low flame till the masala gets cooked well completely and releases oil from sides.further add sprouted moong dal.
  8. Also add water and mix well.
  9. Adjust the consistency by adding water as required.
  10. Cover and simmer for 20 minutes or pressure cook for 2 whistles.
  11. Cook the dal well however, do not over cook as the sprouts will loose their nutritional value.
  12. Finally, serve sprouts curry along with jowar roti or rice.
