Sprouted Moong, Lauki Sabzi (Sprouted Green Gram and Bottle Gourd Sabzi) Bottle gourd (lauki/dhoodhi) is very easy to digest, and being high in water content is soft and easy to chew when cooked. That's the reason I made it frequently when Devansh started eating roti-sabzi. Everyone has their own way of cooking this green gram sabzi. I too make in a different way, but after tasting this dal in my friends place, almost a year back, i decided to make this in that way since we all like that.
Instructions to make Green Moong sprouts sabji !!:
- First wash the green moong dal and soak it for 6 to 7 hrs. Then drain it and put on a strainer covered overnight for it to sprout. Next day it will sprout like the pic shown.
- Now transfer the sprouts to a Kadhai. Put salt and turmeric powder and about 1 glass water & let it cook.
- Then remove the boiled green moong sprouts on a plate. Keep the the other ingredients ready
- Now heat the Kadhai and put oil. When hot add the mustard seeds and jeera. After it splutters add the chopped onion, green chillies, garlic and ginger.
- Sauté well for a few minutes. Then add in the turmeric powder, Red chilly powder & salt. Add garam masala. Add chopped tomatoes and cook till soft.
- Then add the boiled green moong sprouts. Mix everything well. Check salt. Add if needed. When done turn off the heat. Garnish with chopped coriander leaves and grated coconut.
- Serve hot with rice or Rotis
