Usually aloo tamatar sabzi is made to go with pooris and is often made for breakfast. But in that dish we use onions and garlic. Since this dish was made for Navratri fasting, I have spiced with cumin, red chilli powder and black pepper powder.

Steps to make Aloo sabji:
  1. Add tomato, ginger and green chilli in a bowl and blend to make a smooth puree.
  2. Heat oil in a pan. Once the oil is hot, add hing and jeera and let them crackle for a few seconds
  3. Add coriander powder, fennel powder, turmeric powder, kashmiri red chilli powder and garam masala powder and cook until oil separates from the sides.
  4. Break the potatoes using your fingers roughly and add them in the pan. Add water, amchoor powder and salt to taste.
  5. Cook for 3-4 minutes. Add more water if required. The gravy is supposed to be thin
  6. Garnish with fresh coriander. Serve hot with poori or Kachori.
