Steps to make Aloo Baingan Sabji:
- Wash and Cut the brinjals into medium sized cubes. Peel the skin of potatoes and cut them into cubes. I have used brinjal available at home. If you use the big brinjal used for making bharta this sabji will have more authentic taste.
- Heat oil about 4 tbsp in a Kadai. Add the potatoes and fry it on medium flame till it gets little crisp. Then remove it on a stainer.
- Similarly in same Kadai add brinjal and fry it on medium flame. Remove it on a stainer.
- Remove excess oil from kadai.One tbsp oil is enough. Add mustard seeds in hot oil and after it splutters, add jeera, hing, curry leaves.
- Now add the fried potatoes and brinjal. Add salt,turmeric powder, dhaniya powder,jeera powder,red chilli powder and saute it on low flame.
- Then add amchur powder. If you like can add little garam masala powder. Now mix well and saute for 1 or 2 minutes and off the flame. As we have fried potatoes and brinjal the masala will get mixed well soon.
- Garnish sabji with finely chopped fresh coriander leaves. Delicious Aloo Baingan Sabji is ready to eat
