- Cut steamed Patra rolls into 1/2 cm inch wide. Peel off ridge gourd skin and chop in into medium sized pieces
- Heat oil in pan- when oil is hot add fennel, red chilli, asafoetida, and ginger and turmeric- cook it for few seconds.
- Add ridge gourd, salt and mix it well.
- Cook it on low flame for 7-8 minutes.the add red chilli powder, cumin coriander powder and garam masala
