The ingredients needed to make Bhople ki Sabji:
  1. Prepare 200 grams pumpkin (cut into cubes)
  2. Take 2 small potato (cut into cubes)
  3. Make ready 1 bay leaf
  4. Get 2 elaichi (Cardamom)
  5. Make ready 2 laung/cloves
  6. Get 1 dried red chilli
  7. Take 1/2 Biryani phool
  8. Take 1 small cinnamon stick
  9. Take 1/4 tsp jeera/cumin seeds
  10. Prepare 1 tomato (chopped)
  11. Make ready 1 small onion (chopped)
  12. Make ready 1/4 tsp coriander powder
  13. Take 1 tsp ginger-garlic paste
  14. Take 1 chopped green chilli
  15. Prepare 1 tsp Turmeric powder
  16. Get to taste salt
  17. Take as needed oil
  18. Take 1/2 tsp sugar
  19. Take 1 cup water (for gravy)
  20. Take 2 tsp Coriander leaves chopped
  21. Prepare 1/4 tsp Everest Chicken Masala

Now slowly add milk & oil and knead it into a soft dough. The dudhi sabzi recipe comes from my mom and would be a regular sabzi made at least once a week at home. the sabzi is mildly spiced with green chilies. Fresh grated coconut gives a nice sweet taste which accompanies the bland taste of lauki very well. Addition of curry leaves gives the BEST TASTE in this sabzi, so do not skip it.

Steps to make Bhople ki Sabji:
  1. Heat a pan add some oil. Once the oil gets hot, add the potato & pumpkin pieces to it. Add a pinch of turmeric powder and salt & cook them 80 percent or until it gets tender. Remove them in a bowl & keep it aside.
  2. Now in a same pan add some more oil. Add jeera, elaichi, cloves, cinnamon stick, dried red chilli, biriyani phool & bay leaf. Let them turn golden brown. Then add chopped onion, green chilli & tomato, add ginger-garlic paste. Mix everything well. Then add turmeric powder, salt coriander powder & sugar. Saute it for few minutes until oil starts releasing.
  3. Now add fried pumpkin & potatoes to it. Mix everything well so that the pumpkin & potato gets coated to the masalas, very well. Saute it for a minute. Then add a cup of water to it. Mix it well. Cover the lid of the pan and cook it on a low flame for about 10 mins.
  4. Keep stirring occasionally. After 10 mins you will notice that the water is absorbed & the pumpkin-potato chunks has became soft & tender. At this point of time add Everest Chicken Masala & give it a mix. Break few of the pumpkin & potato pieces with a spoon & mix it. Add some chopped coriander leaves and mix everything well once again. Serve it hot with chapati or rice.

Fresh grated coconut gives a nice sweet taste which accompanies the bland taste of lauki very well. Addition of curry leaves gives the BEST TASTE in this sabzi, so do not skip it. For the spicy flavor only green chilies are used. No other spice powder are added. Once hot add mustard seeds and let them pop.
