These green tomato sabji is best when served with Chapatis. We love this simple sabzi with idli,dosa as well. I don't say this is the authentic Maharashtrian style tomato sabji or tomato bhaji. This is just an easy, one pot version which is ideal for working women and bachelors.

Steps to make Tomato Sabji:
  1. Chop the onions and tomatoes in medium sized pieces. Cut the green chilies in big pieces.
  2. Heat oil in pan and add mustard seeds, cumin seeds, turmeric and asafoetida. Add curry leaves and chilies. Later add garlic cloves and sauté. Add onions and sauté till golden brown. Add tomatoes and salt and cook with lid.
  3. Cook till tomatoes gets mushy and cooked well. Add roasted peanut powder and mix thoroughly. Serve with hot chapati.

I don't say this is the authentic Maharashtrian style tomato sabji or tomato bhaji. This is just an easy, one pot version which is ideal for working women and bachelors.
