Steps to make Tomato sabji:
  1. Cut tomatoes in small pieces. Keep all ingredients ready.
  2. Add oil in pan. Add mastard seeds, cumin seeds and pinch of asfotedia.
  3. Add green chilli and ginger paste. Saute for a while and add tomatoes.
  4. Add red chilli powder, turmeric, coriander-cumin powder, salt and sugar mix it well.
  5. Add 1 cup water and cook it for 10 minutes. At the time of eating the sabji add bhavnagri gathiya and have it with roti.

I don't say this is the authentic Maharashtrian style tomato sabji or tomato bhaji. This is just an easy, one pot version which is ideal for working women and bachelors.
