- in a saucepan, pour the can of light coconut milk into pan wit 2-3 Tablespoons of red chili paste or more to taste. heat on low. Stir well.

- Add bite sized chicken bites to pepper and onion mixture. Pour the light coconut mixture over the chicken. Mix well.Turn to low and cover for about 10-15 min so all the flavors mix well together.

- serve with brown or white or Jasmine rice on the side.
