- Stir in the coriander, salt and red pepper flakes and cook for 1 minute. Add the reserved cucumber and the tomatoes, stirring to coat. Bring to a boil, stir in the mint and cornstarch mixture and cook, stirring constantly, until the mixture is slightly thickened, about 1 minute.
